RECIPES:
• 2 eggs
• 10 g of butter and 5 g of olive oil
• Salt and black pepper to taste
• Fresh parsley or rosemary for garnishing

METHODS:
• Crack the eggs into a bowl and season with a little bit of salt.
• Whisk well with a whisk until the egg yolks and egg whites are thoroughly combined.
• Heat the omelette pan and add butter and oil. Heat until it foams but not brown.
• Add the beaten eggs and fry quickly. Move the egg mixture continuously with a spatula until lightly set.
• Remove from the heat and roll up the omelette with a spatula.
• Gently tilt the omelette pan completely over in order to allow the omelette to fall into the middle of the warm plate.
• Straighten up the omelette into cigar shape and brush with melted butter until nice and shiny.
• Garnish with fresh parsley or rosemary and serve warm.
